In Vitro digestions using Dynamic Gastric Model

Job description

The successful applicant will be required to design, supervise and perform advanced in-vitro digestions of samples of various pre-prepared foods (almonds, wheat, chickpeas and bread), using IFR’s Dynamic Gastric Model (DGM) to determine the rate of release of lipids and starch/sugars from the various food matrices.

Good knowledge of in vitro digestions is required and extensive experience in design and running of DGM digestions on food systems is essential. This includes preparation of samples, media and simulated gastric and duodenal fluids, running the control software and sample collection and post processing.
